Kind of a strange little snack, but healthy, and fast, so I’m all over it. It’s apple pie without the pastry. (From More Heart Smart Cooking by Bonnie Stern.)
4 or so apples, peeled, cored, and cut into wedges
1/3 cup flour
1/3 cup sugar
2 tsp cinnamon
Mix the dry ingredients, add the apple slices, and toss to coat. Place on a greased baking sheet and bake for 15-20 mins at 450°F. Serve warm.









I made this one for lunch. 3 out of 4 recommend it in my house. Guess which one walked away from it.
Whole wheat pita sliced in half
2 cups apple diced
8 oz chedder cheese diced (or whatever cheese)
1/4 sour cream (may have to change that one)
4 tsp brown sugar.
Mix together place in pita with some lettuce. They loved it but thought it could be a little on the sweet side instead of the sour side. Will try with ranch dressing next time and cut out the sugar.
Who walked away from it? Hmmm……who’s the picky eater at your house…..I’m going to have to guess. Cole?
Good job. He likes most foods, but common foods. Does not branch out of the box to much.
We tried both of your recipes today. Yummy is all I can say. 4 out of 4 funks approve. 2 out of 4 had for supper and are looking forward to it tomorrow.
